Motivation Monday | Healthy Deviled Eggs Recipe

Sharing this recipe again since it’s one of our favs and a great way to kick off a healthier you for the New year!

It’s time to get out that grill and start enjoying this warmer weather!  Just because you’re eating healthier and working out doesn’t mean you can’t also have treats.  I LOVE deviled eggs but the mayo needed for the recipe is full of extra calories and fat.  My mom has been substituting yogurt in place of mayonnaise for years and it taste just as good if not better!

Ingredients
  • 12 eggs
  • ½ C + 2 tbsp plain yogurt (my mom has used several different flavors)
  • 1½ tsp yellow or djion mustard
  • 1½ tsp white vinegar
  • salt and pepper, to taste
  • paprika, for garnish (optional)
Instructions
  • Place eggs in a saucepan with enough water to cover them.  Bring to a boil, remove and cover for 12 minutes
  • Remove eggs and place in a bowl of ice water. When eggs have cooled, remove shell and slice in half lengthwise
  • Remove egg yolks to a bowl and arrange egg white on a plate cut side up
  • Mix together yolks, yogurt, mustard, vinegar, salt and pepper until creamy
  • Spoon or pipe yolk mixture into egg whites. Sprinkle with paprika.  Store in the refrigerator until ready to serve.

Now the trick is to not devour all of the eggs, so I usually just place a few on my plate then run away quickly!

    I never even got around to hard boiling (or baking ala Pinterest) eggs this Easter (so no coloring eggs at our house either, bad mommy!) I usually only get around to making deviled eggs around easter, to use up the overabundance of hard boiled eggs. My oldest son was quite disappointed that I wasn’t making any this year.

    I don’t eat them myself … I’ve used the low or non-fat mayo and people don’t seem to notice. Do you know how it compares health-wise to yogurt?

      I’m not sure how it would compare if you are already using low/non-fat mayo but the taste just seems really good to us and now that’s the only way I like them…LOL!

    I like deviled eggs but not much of a yogurt eater, however, may have to give this a try for the twist in flavor.

    I love deviled eggs. Sadly though, we only have them when we have a big family dinner for Christmas. Last Christmas we had so much food that we ended up not making any deviled eggs! *insert sad face*

      Marielle we try to make them with just about every cookout during the summer. Which I’m sure is way too much…LOL! Try them out this summer when you start grilling. 😀
