Back in December, before I started the vegan challenge, I did a 21-day smoothie bowl challenge. It was the BEST way for me to transition into a vegan lifestyle. Not only are smoothie bowls delicious, but they can literally provide all of the nutrients you need in a day!
Smoothie bowls are literally what they sound like but even better. You combine your favorite fruits and veggies, whip them up and serve them in a bowl. Smoothie bowl are HUGE on Instagram and I love checking out how creative people are when they make them. My smoothie bowls typically look like something a 3-year-old would make, but still taste amazing!
Last month I had the chance to review the book Beautiful Smoothie Bowls by Carissa Bonham. She is the writer behind the popular blog, Creative Green Living, pulls together eighty delectable recipes for smoothies so good that your kids, friends, and veggie-hating spouse will be begging for more. There are also vegan, dairy-free, paleo and gluten-free recipes in the book as well.
The best thing about making smoothie bowls is that they are really easy and all you need is a blender or food processor. I have a nutri ninja kitchen duo and I use the bowl when I’m making these. Carissa gives detailed, but simple, directions and the ingredients are things that won’t require a trip to Whole Foods or some other high-end specialty shop. She walks you through everything you need to know to produce Instagram-worthy creations in your own kitchen – with 80 recipes to get you started. Every recipe tastes as good as it looks and fills you up, making smoothie bowls the perfect choice for any meal or midday snack.
As soon as we got the book, Morgan requested the Blueberry Muffin smoothie bowl. I figured this would be a great after dinner dessert so I was more than happy to oblige. LOL
Ingredients:
- 1/2 cup rolled oats
- 3/4 cup plain whole milk yogurt (I substituted it with coconut milk yogurt)
- splash of vanilla extract
- 1 tbsp flaxseed
- 1/4 cup coconut or other plant-based milk
- 1 tsp agave syrup
- 1 cup frozen blueberries
- 1/2 frozen banana
Toppings:
- 2 tbsp granola
- 1/2 cup blueberries
Directions:
- Combine all smoothie bowl ingredients except blueberries and banana in a blender jar and blend until smooth and no chunks remain.
- Add blueberries and bananas. Pulse and then blend until smooth.
- Pour into a bow and add toppings.
You can go wild with toppings if you choose. We also like to add chia seeds, shredded coconut, shredded almonds and cocoa nibs sometimes depending on the smoothie bowl ingredients.
I haven’t quite mastered the art of preparing a bowl that looks amazing but as long as they taste good that’s all that matters!
